Chicken Rice Paper Rolls

These rice paper rolls are so fresh, easy to make and packed with protein!

(Single Serve)

Rice Paper Rolls:

3 Rice Paper Sheets

150g Chicken Breast

Red Onion, sliced

Tomato, sliced

Capsicum, sliced

Fresh Coriander

Sauce:

40g Nando’s Peri Sauce

OR

2 Tbsp Greek Yoghurt

Squirt of Sriracha

Method:

  1. Air fry the chicken breast until cooked through and golden. Shred with a fork.

  2. Prepare the rice paper sheets as directed on the packet by soaking briefly in warm water until soft.

  3. Lay the softened rice paper onto a clean surface and add the red onion, tomato, capsicum, shredded chicken and fresh coriander.

  4. Roll tightly into rice paper rolls.

  5. Top with Nando’s sauce or a mix of Greek yoghurt and sriracha.

  6. Sprinkle extra coriander over the top and enjoy my loves!
