My Viral Butter Chicken

Butter Chicken

An easy “fakeaway” to make at home, but make it high protein and lower calories!

(Serves 2)

Ingredients:

300g Chicken Breast

75g Light Greek Yogurt

1 tsp Minced Garlic

1 tsp Cumin

½ tsp Coriander

½ tsp Cinnamon

½ tsp Cayenne Pepper (add more for more of a kick)

½ tsp Turmeric

½ tsp Ginger

50g Tomato Paste

80ml Light Cooking Cream

1 tsp Butter

½ cup Long Grain Rice

Method:

  1. Dice the chicken breast and add to a bowl with the greek yogurt and seasonings. Let marinate for as long as possible.

  2. On a pan on a medium heat, cook the chicken.

  3. While the chicken is cooking, cook your rice your way, I use a rice cooker.

  4. Once the chicken is cooked through, mix the tomato paste with some water to make a sauce.

  5. Add the tomato paste, cooking cream and butter into the chicken and stir.

  6. Plate with the rice to serve. Enjoy <3
