Slow Cooker Beef Ragu

Slow cooker meals are the best to meal prep as the longer you leave them, the better they taste! Beef ragu is a classic and a family friendly dinner.

(Serves 2)

Ingredients:

250g beef brisket

1 small carrot, diced

½ onion, diced

2 garlic cloves, minced

1 cup beef stock

½ tin diced tomatoes

75g pasta (dry weight)

10g Parmesan

Fresh parsley to sprinkle

Method:

  1. Add beef brisket carrot, onion, garlic, stock, and chopped tomatoes to the slow cooker

  2. Cook on low for 6-8 hours (or until beef is tender and shreddable)

  3. Remove beef and shred it with two forks, then stir back into the sauce

  4. Season with salt and pepper

  5. Meanwhile, cook pasta according to packet instructions

  6. Drain and divide between plates

  7. Spoon ragu over pasta, sprinkle with parsley and parmesan, and serve. Enjoy <3
